I love spending time with my family, cooking a new dish or gran's old favorites....it's about creating & styling something delicious.. Food brings people together and, for me, is best enjoyed around a table with my friends and loved ones.

I love working with fresh produce to create something incredible, to write recipes that are simple, yet delicious, flavourful and fun to make.

My cooking workshops are a social, interactive affair where participants cook their own food and enjoy their beautiful creations over lunch or dinner around my dining table. Not only are they fun but also informative, where I share recipes, tips & cooking techniques for the aspiring Chef or home-cook.

My classes are ideal for a fun n night out to meet new food friends or for your annual Corporate event, bridal party, birthday or private get-together.

UMAMI POTATOES

No ordinary potato salad, this is one recipe you will return to. Again and again.

Fluffy potatoes draped in a creamy, tangy dressing with the savoury richness of the anchovies that adds depth and flavour.

i n g r e d i e n t s | s e r v e s 4
800g Baby potatoes, rinsed
2 tsp Dijon mustard
3-4 Anchovy fillets, chopped
1 Small garlic clove, finely chopped
1/2 tsp Chilli flakes (optional)
Juice of 1 lemon
60ml Good quality olive oil
Large bunch fresh parsley, roughly chopped
Salt, to taste
Black pepper, to taste

m e t h o d
Bring a pot of salted water to the boil.
Add the potatoes and cook for about 12 minutes until just tender.

Drain and set aside while you make the dressing.

In a bowl, combine the mustard, garlic, chilli flakes, if using, anchovy, lemon juice & olive oil. Mix well.
Season with salt & pepper and mix.

Slice the potatoes in half and transfer it to a bowl.
Toss half of the dressing through the potatoes and leave aside for about 15 minutes so that all that delicious flavour can pull into the potatoes.

Drizzle the remaining dressing over the potatoes just before serving.
Add the parsley and toss again.

Enjoy!

I love a delicious side dish and this one ticks all the boxes! Great served on its own on meatless Monday or as a side to your next braai or family dinner.

SPICY SWEET POTATO WEDGES WITH HUMMUS & PUMPKIN SALSA

FOR THE CHILI SAUCE
80ml Sriracha sauce
60ml Olive oil
1 tsp Maple syrup or honey

FOR THE HUMMUS
1 Can chickpeas, drained and liquid reserved
1 tsp Sesame oil
3 Tbs Olive oil
Juice of 1 lemon
2 Garlic cloves
½ tsp Ground cumin
½ tsp Paprika (not smoked)
½ tsp Salt

FOR THE SWEET POTATOES
1kg Sweet potatoes, skin on, cut
into wedges
3 Tbs Olive oil
2 tsp Paprika
1 tsp Ground cumin

FOR THE SALSA
2 Tbs Pumpkin seeds
2 Tbs Olive oil
3 Spring onions finely sliced on
the diagonal
2 tsp Lemon juice
Salt, to taste
Black pepper, to taste

In a small bowl, combine the chili sauce ingredients and
incorporate well. Set aside.

In a bowl of a food processor, combine the hummus ingredients with 4 tablespoons of the reserved liquid. Pulse until smooth and well incorporated. Add more of the reserved liquid if necessary and continue to pulse until smooth.
Set aside.

Preheat the oven to 190C.
Line a large baking tray with baking paper. Add the sweet potato wedges to the baking tray.
Drizzle with the olive oil and sprinkle with the smoked paprika.

Season with salt & black pepper.
Roast in the oven for 25-30 minutes until soft and lightly charred.
Remove the sweet potato from the oven and drizzle with half of the chili oil.

Meanwhile, place a pan over medium heat. Once hot, add the pumpkin seeds with the olive oil and a pinch of salt. Toast for 3-4 minutes.
Remove from the heat. Add the spring onions and lime/lemon juice. Set aside.

To serve:
Spread the hummus onto a serving platter and arrange the sweet potato on top.
Pour the remaining chili dressing over and spoon over the pumpkin seed salsa.

Enjoy!

Delicious tossed through pasta, to stuff chicken, spread on toast or served as a dip with crackers.

i n g r e d i e n t s |
1 1/2 Cups pitted olives
4 Sun-dried tomatoes, sliced
4 Tbs Olive oil
1 1/2 Tbs Capers
1 Tbs Lemon juice or red wine vinegar
1 Garlic clove
Small bunch basil, roughly chopped
Small bunch parsley, roughly chopped
1/2 Small chilli
Salt, to taste
Good grind of black pepper

m e t h o d |
in a small food processor combine the olives, sun-dried tomatoes, capers, olive oil, garlic, chilli & lemon juice.

Pulse until you reach the desired consistency.

Taste and season with salt & black pepper.

Add the fresh herbs and combine.

Store in an air-tight container in the fridge for up to 5 days.

Enjoy!

Spaghetti with clams

A lovely afternoon spent with my 5-year old, making pasta from scratch and turning it into a delectable Italian feast!

My version of this popular dish. Great served with a crisp salad and glass of Chardonnay.

i n g r e d i e n t s |
1 Small onion, chopped
4 Garlic cloves, sliced
80g Butter
3 Tbs Olive oil
Small bunch fresh thyme, leaves only
1kg Clams, thawed
1 1/2 Cups dry white wine
100ml Cream
1/4 Cup Parmesan, grated
1/2 Cup chicken stock
Salt, to taste
Black pepper, to taste
2 Small chilies, chopped (optional)
350g Spaghetti (store bought is fine)
2 Handfuls fresh parsley, roughly chopped
Zest of 1 lemon

m e t h o d
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions.
Drain the pasta, reserving 1 cup of the cooking liquid.
Toss the pasta with olive oil to prevent it from sticking together. Set aside until needed.

Heat the olive oil in a pan over medium heat.
Cook the onions, occasionally stirring, until soft and translucent. About 4 minutes.

Add the butter, thyme, garlic & chili and cook for 30 seconds.
Pour the wine into the pan and simmer for about 4 minutes until slightly reduced.

Add the chicken stock and cook until reduced by half.

Transfer the clams to the pan and cover with a lid. Steam for about 3-4 minutes until the clams have opened.
Discard any unopened clams.

Pour the reserved starchy water into rn pan and toss.
Cook for a minute.
Add the cream & Parmesan and season with salt & pepper.

Transfer the pasta to the pan and toss.

Sprinkle the parsley & lemon zest over.

Enjoy! x

Treat yourself this weekend with a large bowl of fresh mussels in a fragrant broth...
Best served in a large platter on the table with steamed rice, crusty bread and a chilled bottle of Chardonnay.

FRESH BLACK MUSSELS IN A THAI COCONUT & CORIANDER BROTH

Ingredients | Serves 4-6 | Easy
2kg Fresh black mussels, debearded & scrubbed
2 Tbs Olive oil
1 Lemongrass stalk, halved & lightly pounded ‘
4 Lime leaves (optional)
Small knob of ginger, peeled & sliced
1 Small onion, sliced
3 Garlic cloves, sliced
1 Can coconut milk
1 Tbs Green curry paste
1 tsp Fish sauce
2 Tbs Lime juice
½ tsp Sugar
Large bunch fresh coriander, leaves only + more for garnish
Salt & black pepper, to taste

Method
Heat the olive oil in a pot over medium heat.

Sauté the onion, while stirring, until translucent. About 3 minutes.

Add the lemongrass, ginger & lime leaves and cook for 30 seconds.

Add the green curry paste, sugar & fish sauce. Stir to combine and cook for 30 seconds.

Pour the coconut milk into the pot and stir. Season the mixture with salt & pepper and a little more sugar if desired.
Add the lime juice and stir.

Transfer the mussels to the pot and add the coriander leaves. Cover with a lid.
Allow the mussels to cook for 4-5 minutes until they have fully opened. Discard any unopened mussels.

Spoon the mussels onto a serving platter.
Pour the sauce over the mussels and garnish with the extra coriander.

Serve with hot rice or crusty bread.

Another memorable culinary experience was had yesterday!

With a boardroom as our kitchen space, we created and served a delicious brunch to a group of 100 beautiful, inspiring ladies, in celebration of Women’s Day.

I waited for this day for months and it finally arrived!!
A successful and fun morning cooking with 37 participants!
So privileged that I was a part of this amazing event for RHODES FOOD GROUP at the pristine and very beautiful @erinvalehotel yesterday.

An Italian inspired menu of homemade tortelini with sage brown butter and an Italian inspired tomato based sauce, an Italian salad & bruschetta with zesty beans.

The dried herbs & spices was from @hinds_spices_the_strong_one
Dairy was the Ayrshire range from @woolworths_sa
Canned ingredients was from Rhodes.

A big thank you to Sophie & Maria for arranging this stunning event and Marguerite, Busi and their incredible staff at Erinvale for their efforts, time and exceptional service.

And lastly, my sous Chef and staff…it is always an amazing experience working with you!!

A short, fun trip to Paarl this weekend visiting friends turned into a quick crash course to master making Pinsa at one of my favourite restaurants, @wilderer_sa PAPPA GRAPPA. A Roman style pizza, crispy on the outside and soft and pillowy on the inside. What a treat!

Although I didn’t quite master this art, it was a great, unexpected experience offered by legendary @christianwilderer
who travelled to Rome to learn this fine skill.

From our garden, organically grown. So simple cleaning it out by cutting through the skin and hollowing it out using a spoon. (You really just want to remove the seeds.)

Add a dash of olive oil, salt & pepper to the cavity and roast in a preheated oven @ 190C until just tender.
Rest for a few minutes and slice into wedges.

Good food kept simple.
